Saw this and wanted to recommend pretty much the entirety or the Souls series of games. But I'll go and pick through the ones I think would match in some sense as many can be too combat oriented. Although I'll pick , I'd say give them a second opinion and maybe a few could not fit perfectly.

To take a bit of a turn RTS music, especially from older games can be some of the most interesting as well.
Age of Empires 3. All of it, yes I mean it. The tracks from the original pre-remaster version for the main game and its expansion packs. They're all chefs kiss. Even the battle tracks.

I'm going to second YourCreator's comment, Oblivion music. I'd say the whole soundtrack fits just so wonderfully for anytime of the day, except the battle tracks of course and exclude the main themes. To add on Morrowind's soundtrack would fit so wonderfully as well for pretty much all times, minus the battle tracks and main theme of course.

I would like to recommend The Long Dark tracks as well. Their volume 1 has subalbums. With subalbum Survival I would say fitting pretty much all environments. But I would say especially during winter time, and night times. The next whole subalbum I'd say is Wintermute - Ambient, it would fit everything just as well, but again especially winter time and night times.

I would also say Mount & Blade Warband had good tracks, especially the ambient type ones:
