Vinegar is one of those materials present in the vanilla game that currently has no Survival implementation. Some mods, like Expanded Matter add ways to obtain it back into the base game without adding much functionality farther than that.

This mod came from a personal experience of making Vinegar for pickling, without realizing the functionality had not been added in Expanded Matter, and desperately wanting it. Historically, I do not know how common Vinegar was used for pickling in place of salt brine but I do know vinegar is used today (though it is often watered down for flavor).

This is my first mod, so forgive the basic functionality. Vinegar is an alternative to Salt Brine for pickling vegetables, currently within the same ratio and time frame. You will need a mod that adds a recipe for making vinegar, (in my case, Expanded Matter) as I have only added vinegar as an ingredient to the pickled vegetable recipe, nothing more.
